Recipe: Oven Pancakes

I don't often post recipes, and part of that reason is because I don't often cook.  LOL!  However, this recipe has been my Sunday Morning Brunch menu for the past two weeks!  If your looking for a delicious summer treat, this breakfast is for you..........





Recipe

Ingredients
2 tablespoons butter or margarine
2 eggs
1/2 cup all-purpose flour
1/2 cup milk
1/2 teaspoon salt
1 teaspoon pure vanilla extract or a splash of lemon juice 

2 cups assorted fresh berries
Powdered sugar, if desired  

3 tablespoons of butter (Melt in Skillet)

Directions 

With a mixer, place eggs in a bowl and beat on medium speed until mixed.
Add the milk and combine.
Slowly add the flour, vanilla, 2 tablespoons of melted butter, and salt and mix by hand until smooth.  (Mix by hand, and its lumpy) 

Cooking 

Preheat Oven to 400 degrees 
Place Cast Iron Skillet in oven and melt  butter. Once butter is melted, pour mixed incrediants into pan and cook for 15 minutes. 
After 15 minutes, reduce heat to 350 degrees and cook for an additional 5 minuts. 

Pancakes should cook until puffy and deep golden brown. 
Serve pancake immediately topped with berries. 
Sprinkle with powdered sugar.
